Eating well on a diet!


They say that a busy kitchen is also happy kitchen and that was certainly true on this day, as I made up a batch of potato salad and a small pot of vegetable beef soup! (Did I mention that people who are on diets like to hang out in their kitchens a lot)! Well, they do!

Truth be told, my potato salad creation was a bit of a last minute concoction. The idea of making it occurred when I was adding some chopped potato to my soup. I had quite a bit left over and decided that I might as well make up some potato salad while I was at it! Yeah. Potato salad. The perfect addition for one who is one a strict diet!

As I have made up both these kitchen favorites pretty often, I was in and out of there in less than twenty minutes! (I owe a lot of my speed to the fact that I don’t use and measuring cups or spoons, preferring to eyeball the amounts! Not surprisingly, this method insures that my creations are constantly unique). I just make very sure that I have the ‘basics’ to start with. In the case of the potato salad, that would be; potatoes, celery, onion, mustard, vinegar, hard boiled eggs and some salt and pepper. Likewise, my soup always requires a can of diced tomatoes, cubed potatoes, celery and braised cubed beef. On this particular ‘do’, I also had a couple of green onions that were chopped up and thrown in. As far as the essential soup herbs went, I generally add about a half teaspoon each of dried oregano and basil. Then, just to make things interesting, I like to use a dash of cayenne pepper! (I feel that this gives the dish a certain quintessential culinary bite)!

So, it came to pass that I enjoyed the above two with a grilled cheese sandwich! And, in order to square things with my diet, I made sure to eat only ½ the sandwich, a cup of soup and a half cup of potato salad. The caloric impact was just under 450 calories and didn’t ‘break the bank’ so to speak!
