Beef stir fry for us idiot men!


Stir fry feb 8Long ago, I had to face the fact that I would never be rich enough to afford a personal chef to cook all my meals. Thus, I had to learn to make some simple dishes or face life eating exclusively at McDonald’s…

This recipe has a lot of good things going for it! Most importantly, it is very easy to make. It’s also tasty and relatively nutritious. I call it my Beef stir fry for us idiot men’ recipe mainly because of the simple to find ingredients and the no-brainer instructions:

¼ cup of stew beef, cubed
¼ cup assorted bell peppers, sliced thin
¼ cup onions, sliced
¼ cup mushrooms, sliced
1 cup instant riced, cooked
1 tsp Oregano, dried
1 clove of garlic, minced
1 tbsp olive oil
1 tbsp Worcestershire sauce

Directions:

I begin this meal deal by first making up a cup’s worth of instant rice. [Quite often, I will make up the rice and will also slice up the veggies a day in advance. These are then stored in containers in the fridge until needed. Doing that makes for a fast breakfast the next day! An important point if you’re nursing a hangover from the night before]!

When I’m ready prepare this meal, I’ll take a small frying pan, add the olive oil and heat this to medium high. Then, in go the veggies and mushrooms which are sautéed for about a minute, or so. Next, the beef is added along with the garlic, Oregano and Worcestershire sauce. Everything gets stirred around a bit as it is sautéed on medium-high heat for about two minutes. When it’s done to your satisfaction, plate it out on top of a bed of rice.

See! If you prepared most everything ahead of time, as I suggested, this meal goes together in a flash and will serve two! Bon appetite! Serves 2.
