Making Your Salad Dollar Stretch!

A recent visit to the local grocery store in my town of Forsyth, Missouri convinced me more than ever that many of us should consider planting a small garden. Lettuce was well over a dollar a head, celery was pushing two dollars and you don’t even want to here about the cost of bell peppers! Yet, I’ve found a way to make these items really stretch.

I will admit that I am a salad junkie! Have been for as long as I can remember and it’s not unusual for me to have a salad with most every meal. But, since economic times have gone down hill and what with the job market all but non-existent, I’ve really had to watch my spending patterns. Trying to save is most felt when I shop for food these days. Not so long ago, a can of corn was under fifty cents. Now you can spend over a dollar. Vegetables were downright cheap and I can remember friends asking me why I even bothered to garden. I would always come back with the fact that my produce was at least pesticide free. Now, in 2010, I don’t have to use that excuse any longer.

So, how do I save money? If you look closely at the picture for this blog you will see that I have a pretty happy salad going here. There’s lettuce, romaine, parsley, celery, radishes, green onion and even a little bit of ham mixed with leftover peas going on in this dish. Because about half the ingredients came from my garden, the cost of this great diet meal is under a quarter! (At my last visit to a restaurant a small dinner salad was $2.50). Also, by creatively using leftovers from other meals, I am making use of ever bit of purchased food while enjoying the benefits of fresh produce from the garden. Now that’s a great way to save. Alice’s Famous Chili

One afternoon while I was looking through some old books I had stored in the basement, I came across a real gem from my distant past. It was a book called Alice’s Restaurant Cookbook and contained a collection of recipes that Alice May Brock used in her Brooklyn New York establishment made famous by Arlo Guthrie in a song and then later in a movie of the same name directed by Arthur Penn.

The book and the recipes therein were written in the footloose and fancy free spirit that so characterized the times. It was published in 1969 by Random House and was an instant success for a whole generation of hippies and flower children like myself. One recipe that caught my interest was Alice’s Famous Chili which I have produced exactly from the book.

“In half an inch of oil or bacon fat, sauté until soft: 3 chopped onions, 3 chopped green peppers, and 3 large cloves of finely chopped garlic. In another pan brown 1 or 2 pounds of chopped beef. Drain the fat from the beef and add the beef to the onions and peppers ( or add the onions and peppers to the beef). Now add 1 or 2 cans of tomatoes, 1 can of tomato paste, and 2 to 8 tablespoons of chili powder. (You can always add more chili powder later, so start off easy). Add 1 tablespoon of sugar, a sprinkling of salt, pepper and paprika, 2 bay leaves, a teaspoon of cumin, a teaspoon of basil and a pinch of cayenne or some hot chili sauce. Simmer all this for at least half an hour until it is good and thick. Then add 1 or 2 cans of kidney beans. Serve this on rice and top it with some chopped raw onions. (Makes 6 to 8 servings.)”

While I’m a little leery of using a half an inch of any oil in a recipe, I do want to give this recipe a fair shake. To that end I’ve decided to do a You Tube movie some time soon which will appear on the Danomanno Channel.

Garlic Update – Not a Pretty Picture!

If you read my blog on ‘Growing Garlic in a Pot’ posted on the 9th of February you would know not to expect a very pretty looking plant. (I think the picture pretty much says it all). This looks more like an onion plant than anything else! Oh wait! Why yes, garlic is a member of that family. Stupid me. However upon a taste test, I can tell you that the leaves taste like…. garlic. What a surprise.

Now that spring is only a few weeks away (March 21st). I’m hoping to get the plant moved out to the garden where it can do its growing thing. Perhaps by August I will have some fresh cloves to harvest. Perhaps not. Anyway this was an experiment from the start and if nothing else, I can use the tops to flavor some recipes.

There’s Nothing Like a Homegrown Spring Salad!

romaine-salad-largeNothing says, “Hey! It’s Spring!” any more than a nice fresh salad with vegetables. Especially one  grown from your own little backyard garden. Earlier in January, I had some misgivings concerning the lettuce starts I had seeded in October. For the better part of the winter, they just languished in the frames… not really doing anything. Then, as if by magic, as the weather became warmer in March and April, they really took off and flourished! To my increasing amazement, I am still harvesting romaine from the two cold frames (see my earlier blogs) and have to admit that now the effort was worth it. Pictured, at right, is a salad I prepared today. It featured homegrown lettuce, green onions, chives, celery and radishes. Only the celery is store bought. Not bad! Right now I have my spring lettuce starts in the garden and they are still a bit tiny. I’ve also put out green bell pepper, broccoli and Brussels sprout transplants along with some carrot seed that is now growing nicely. I’ll try and get in a more comprehensive report on the garden later next week.

Onions – Not Just for Breakfast Anymore

Onions have been around for just about forever, I think. I know they are one of the oldest cultivated plants in existence. I like them for a couple of reasons; they taste good and they can hang out in the garden long after other crops have bolted or withered away. Every spring season, they are among the very first to be planted in my garden, usually in the form of onion sets. After just a few weeks, they send a set of slender green stalks that, if harvested soon thereafter, are called green or spring onions. I love to dice these up and add them to my salads. Later in the season, assuming you have thinned them to stand a few inches apart, you may see them bulb up into regular onions that can be pulled, air dried (cured) and then used throughout the fall.

Did you know that the regular consumption of onions has been shown to lower high cholesterol levels and high blood pressure? Two problems common to many of us. I’m told these beneficial effects are likely due to onions’ sulfur compounds, its chromium and its vitamin B6. The studies are still on-going but early results have been very encouraging. Now if I could just figure out what to do about my bad breath!
